Parmigiana di melanzane, NOT Melenzane alla Parmigiana NOR Eggplant Parmesan, has been declared as the official dish of the 9th International Day of Italian Cuisines, during the last Italian Cuisine . It is a traditional dish originated in Southern Italy and widespread in Naples and Campania, Calabria and Sicily. In the past couple of decades, however, the dish has become increasingly popular also in the rest of Italy and all around the world, thanks to the boom of Italian restaurants with chefs trained in Italy.
Parmigiana di melanzane has nothing to see with dishes as Chicken or Veal Parmesan and the similar unauthentic culinary aberrations famous in the United States and labeled as Italian.
In the Italian cookbooks of the past few centuries there are many mentions of dishes prepared a la parmigiana (Parmesan style), which however don’t seem to have a clear and consistent common denominator, and in any case have nothing to do with the Parmigiana di melanzane.
